After receiving his the master's degree at Hawai'i Pacific University, he started his own musubi delicatessen which strictly sticks to the standards of modern Japan. His mission is to reintroduce and revitalize Hawaii's musubi culture. Made with local ingredients to an extent, we are open to disclosing the products used and the preparation process.

We keep in mind that freshly cooked rice will naturally stick together as it cools down and releases excess steam. To help this process along effectively, we need to make as much space as possible between each rice grain.

Manabu's wife, Fumiyo, as a licensed nutritionist has developed a standard for quality control here at Mana Musubi. In addition, she has created a collection of handmade recipes for the Musubi fillings as well as a variety of Japanese low-fat desserts which is a favorite among the local foodie community. The options range Low-Fat Custards to Hawaiian Coffee Jello and our newest product, the Matcha Pudding.
